Our summer sausage recipe was given to us nearly a quarter century ago by the great Polish sausage maker, Don Riski. He owned and operated a small butcher shop and smokehouse similar to ours in Niagara, North Dakota, for most of his life. Don loved his smoked sausage almost as much as he loved his brandy. And while he is no longer with us, his North Dakota Summer Sausage recipe lives on as one of our top sellers year after year. B & E Meats has won several awards for our North Dakota Summer Sausage including “Grand Champion” and “Best of Show” at the Northwest Meat Processors Smoked Meats Competition.
